🥂 Champagne: The Bubbly Icon of Celebration

Champagne isn’t just a drink - it’s the drink people reach for when something big, exciting, or unforgettable is happening.

A Sparkling Beginning

Champagne’s story starts in the 1600s in the rolling hills of northeastern France -  in a region so special that only sparkling wine made there can be called Champagne. Winemakers originally struggled to control the unexpected bubbles caused by cold winters and warm springs. Eventually, they mastered the secondary fermentation, and by the 1800s Champagne became the drink of royalty, luxury, and life’s biggest celebrations.

(And no, Dom Pérignon didn’t invent Champagne -  but he did help perfect it!)

How Champagne Gets Its Bubbles

Champagne is crafted using the traditional method (aka méthode champenoise) -  the most labour-intensive sparkling winemaking process in the world.

From vineyard to bottle:

  1. Harvesting the grapes - usually Chardonnay, Pinot Noir, and Pinot Meunier.

  2. Fermenting into a base wine.

  3. Blending wines (sometimes from multiple years) to achieve the house’s signature taste.

  4. Bottling + second fermentation with yeast + sugar - this is where the magic happens.

  5. Aging on the lees (resting on the yeast) - adding flavour, texture, and tiny bubbles.

  6. Riddling & disgorging - removing yeast sediment.

  7. Dosage - adding a touch of sweetness to finish the style (brut, extra brut, etc.).

By the time it reaches your glass? It’s been carefully crafted and aged to perfection.
